Roast Gravy With Pasta

 

Wondering what to do with all that yummy leftover roast gravy?  Utilize your roast gravy with your next pasta dish:)

This is what dreams are made of in Italy. There is nothing quite as tasty as this drizzled over your freshly cooked pasta. There is even a name for it: la pasta col tocco d’arrosto. Top it off with a little parmigiano and call it quits.

The next time you try the roast chicken with rosemary and lemon salt rub save the juice for your next meal.

What I usually do is deglaze my roast pan after a roast, and add to the juice any left over chicken pieces. I also squeeze the lemons from the bird cavity into this mixture too, which adds such a vibrant taste.  You can freeze it indefinitely, or refrigerate it and use it over the next couple of days with some pasta.

When you are ready to utilize the gravy, heat it up gently in a sauce pan while you are boiling your pasta water.  Shred some parmigiano too.  When the pasta is ready, quickly drain it, toss it with the sauce, throw some parmigiano on top and you are all done.

For a little variety you can throw some fresh or cooked frozen peas in it too, and you will have a complete meal.

Nothing else to it!  Just pure heaven on earth.  And your kids will love it.
