How about a breakfast asparagus frittata or an egg scramble with onions and asparagus. Start off with a little onion and good olive oil and then add your asparagus for a couple of minutes. Add in a mixture of eggs, milk, parmigiano cheese, salt, pepper, and fresh herbs if you got them, and cook away.
It works as a frittata, scrambler, or omelette. And can be enjoyed day or night!
